One cup of cooked beets contains about 60 calories. They have a decent amount of potassium, vitamin C, fiber, magnesium and iron. Beets are particularly rich in folic acid, calcium, and iron. They are a member of the chenopod family and boost energy. SUPER FOOD!

Research suggests that beets reduce inflammation, lead to weight loss, help fight cancer and reduce blood pressure. Frankly, I'm disappointed I didn't start eating them sooner. That is a tremendous number of benefits packed into one food. 

The many phytonutrients found in beets function as an anti-inflammatory. People suffering from heart disease and arthritis are often times encouraged to include beets in their diet to
help reduce inflammation in their body.  Beets contain a wealth of fiber -- half soluble and half insoluble. Both types play roles in fighting fat.

DETOX THE BODY AND FIGHT CANCER

The betalin pigments present in beets have repeatedly been shown to support activity in our body's detoxification process. Beet juice helps to detoxify as well as protect our cells with much needed (easily absorbed) nutrients and oxygen. Today, athletes worldwide are beginning to understand the importance of nutrient dense liquids by incorporating beet juice into their training routines for better physical performance.
 
And, some breakthrough studies have shown that the same characteristics in beets -- which help athletes perform better -- help cancer patients reverse their condition. HOW TO EAT YOUR BEETS

Many people don't know that you can eat the fleshy root AND the greens of beets. You can slice and grill, cube and steam, slice or cube and bake or even juice them.
